Tilting Kettles
Cleveland gas tilting kettles use a steam jacket to heat the entire wall of the cooking vessel, providing perfectly even heat distribution with no hot spots. The KGL40T (40 gallon, 140,000 BTU) features a 2/3 steam jacket, 304 stainless steel construction, floor-mounted control console, and flanged feet for stability. Tilting kettles are ideal for producing large volumes of soups, stocks, sauces, gravies, and boiled items. In Indian restaurant and catering kitchens, a tilting kettle handles large-batch dal, sambar, rasam, chole, and any liquid-heavy dish that needs consistent, gentle heat across a large volume without scorching at the bottom.
